How to change the week start day for the service quality and availability reports as our working days are from Sunday to Thursday?
How to produce a similar or almost a similar customizable service quality report for the respective teams e.g. application, infrastructure, etc.?

Leaving the beauty of the auto-generated reports, especially with the scoring and asking the customer to use ELK if you need custom reports, will not be a wise and pleasant statement from my side 🙂
Extracting metrics a paint unless you know what individual metrics you need for which entities, since Dynatrace will not provide "metric" export interface as it does for user sessions.
I'd rather recommend using the Dynatrace API directly and produce the reports in a business intelligence or reporting tool (Cognos / BIRT / Jasper reports / ... ).
