I am not sure if this is possible. We have one AMD that is on the Backend of a Netscaler VIP. We are needing to see traffic from a Web Server to the actual Client IP. However, we have a Netscaler VIP, so all Client traffic is simply displaying the VIP IP address.
I wasn't sure if there were any configuration I can do to extract the external Client IP.

There is a way to do it, but it depends on if it exists and where the real client IP address is. The packet addresses will only have the load balancer and web server addresses, as you point out.
In the http header there may be a field that contains the actual user address. The load balancer has to be configured to insert that header parameter - X-Forwarded-For or True-Client-IP are the most common. Perhaps another method is being used. Extracting the client IP address hinges on where the client address is exposed.
If that field is there then the software service - http options tab has a section to extract the true client IP address. (Global settins can also be setup if this is common to all HTTP software services). Simply select header tag and the name of the field to extract the client's IP address. If other methods are in use they can be configured in the same place.
