Is it possible to manipulate already ingested log data in Dynatrace (specificly Managed in this case)?

Not really. As far I know, what stores in dynatrace is uneditable (regarding to data).

Do you know how it is actually stored? 

For LogMonitoring V1 here is doc that may be helpful, you are configuring storage for logs and they should be there as files (as fay I know)

For LogMonitoring V2 logs are transfered to DT as Well but I'm not sure if they are stored as raw files. They should be indexed for new features somehow. Docs related to storage:

Do you need some sensitive data to be removed from logs or what is the usecase?
