How do I use Dashboards to calculate the success rate, response time, memory, etc., of custom services?

What comes to mind is using Calcukate Service Metrics: Calculated metrics for Services — Dynatrace Docs.

However, you are not able to do very advanced calculations, in which case you can use external ELK and Kibana.

For the SaaS version, you can think about using Grail.
