How do I chart a specific HTTP error code rather than 4XX or 5XX?
If you go into an individual service’s detail page you can use the filter at the top to view a chart that only contains specific response codes but at the moment in custom charting only the aggregated 4XX and 5XX metrics are available.

It won’t be available on the dashboard, but as a bookmark in the service screen.
