I have a process that is stopped at night. So the availability tile indicates around 50%.

How can I create a tile in my dashboard to indicate 100% of availability by excluding the maintenance windows?

Are you talking about availability from a Synthetic Monitor?

The Synthetic Availability Tiles do have the option to exclude Maintenance Windows:
