Launcher customization?

When one is landing on the new UI, we are greeted by the app Launcher.

What type of customizations do we have, at the tenant level, and that would apply to all tenant users?

The documentation talks about "customization options", but am not aware of them at the tenant level:

What can we do at the moment?

That would be really nice to customize it per the organization.
