As far I understand, connection to the server need to be down for 5 mins at least for this alert to be triggered.
Is there any option to change the sensitivity of this alert?
For example, I want to change the threshold to 3 mins instead of 5 mins.

You are correct on this. Currently there is no way to adjust this timeframe for detecting the issue, and raising a problem card. Just for clarification, this falls outside the scope of alert profiles as alert profiles will trigger once the issue is detected. If you want to Shorten the time for the problem to be detected, I recommend creating a RFE.
