I was wondering, how can I exclude the monitoring of a service globally [as for example the "Welcome to Tomcat" service]

There is no such option by default, only idea I have is playing with this option in Deep Monitoring Settings:
if you are able to prepare rules that will exclude requests passing through unwanted services, thay will disappear after some time. But you have to be careful to not exclude requests from other services as well.
I have one more workaround. You can create management zone that will contain all entities you want and does not contain those unwanted services. As long as you will have management zone active, you will not see them. Another thing is that you can use this same filter (management zone) in alerting profiles. In such cases you will receive notifications about problems related to important entities only. Problems displayed in gui would be filtered as well.

Ok, thank you for answering
in my case I won't use neither of the wokaround you suggested since, by doing so, I can miss important data.
I wish a similar feature (disabling specifc services) will be available in the future.
